I used to work there. If you knew was was going on with the Saucy, you'd never order it again.

If you're going between 6:45 and 7:15, plan to wait a while.

I will never go there on a weekend evening. NEVER.

Nah, I'd eat it still. I don't care if it's pig butt and cow eyes ground up with some brain, it tastes good! Plus yeah, it's the cheapest thing on the menu.

But I'm kind of curious now....

Agreed.

Besides, I think if you knew what went on in the kitchen in any restaurant you would be surprised, I don't think Hickory Park has a monopoly on that.

Isn't it spring break? It should be pretty dead tonight. I would say 20 min wait is what you would really see. Still better than anywhere in DSM.

I worked there as well. I never order the Saucy Southerner, but it's more edible than some on here would lead you to believe. You could almost call it "mystery meat" because of the variety in there.

I was really surprised tonight as I was leaving Ames today I went by Hickory Park it had to be around 6:30 and the place was packed and there was a line around the building out the door!!! But yes usually they do a very good job of shuffling people through there, and the food is well worth the wait!!!

Personally, I don't CARE what's in the "Saucy Southerner." And pig butt is my favorite.

When I was running restaurants, I was a friggin' kitchen Nazi. If you didn't keep your work area clean enough to eat from the floor, I made your life a living heck. If you did something unsanitary, you were gone.

Something warms the cockles of my heart when I see a clean industrial kitchen.

I am still in a bit of a food coma state some 2 hours after leaving. It was unreal. Heck, the smells that hit me as I walked into the building were enough of a snack to tide me over.

Very good food, and one of the best places I have ever grubbed in.
