Two cups cooked rice
2 tsp olive oil (I find you can never use enough olive oil)
1 onion diced
4 garlic cloves
3 pounds ground meat
salt
pepper
1 red bell pepper, diced
2 tsp curry powder (to taste)
1 tsp cumin
14 ounce can coconut milk
2 tbsp fresh cilantro

Just cook the ingredients until they're done, in the order given; except the rice, and you will have a quick and delicious curry dish.

I fixed this for my family this evening, and while I used hot curry powder, and it had quite a bite, it was very flavorful and made the house smell wonderful.

We used a beef/turkey mix for meat. Really, any kind of meat would work.

Add some naan for the side and to dip and then you really can't go wrong!

I love curry and that's similar to my recipe, however you use a crapload of garlic. :wink:

Planning to do a lot of cooking for the family in the next two weeks? I'd love more of your recipes before you leave, so I can have my husband make them for us.

I'm crushed....

Sunday we had what we call Spectacular Pasta.

1 pound fake crab
1 bunch asparagus (Chilean asparagus is really cheap at Hy-Vee right now
1 bell pepper
olive oil
pasta of choice
as much garlic cloves as you can stand
parmesan, or some other hard cheese, grated

saute the garlic cloves and onion if you like in the olive oil.

Add the crab and the asparagus and the pepper, saute some more

Once the asparagus is tender, fold everything in with the cooked pasta, and cook it over heat, until the cheese starts to melt.

Serve.

Not really a recipe, and I do it differently each and every time, depending on my whim, but it always tastes wonderful.

Honestly, if you want passion, find a olive-skinned, dark haired, sloe-eyed Italian beauty, feed her garlic and vino and then prepared to be flayed alive.

What a way to go, Mamma Mia!!!

Actually, the Rum! And not just any rum, but 8 year old Rhum Barbancourt.

Truly the king of rum. I'm not getting any more for a year, so I might as well kill the bottle this week, and I have a long ways to go....

One more recipe:

Make some bread dough. For me, I like breadmakers for their ability to painlessly turn out nearly perfect dough. I just set it on "make dough", throw in a cup of water, 2 tbsp of olive oil, a tsp of salt, 2 tbsp of dried milk, 3 cups of flour and 3 tsp of yeast, and 1.5 hours later, viola! Bread dough. If you don't have a breadmaker, shame on you; you can get them for free on trash day, or for $5-$10 at Goodwill. If you like suffering, use Betty Crocker or any other bread recipe and do it by hand.

Divide the dough into 4 equal sized balls, and flatten them as much as you can, or care to. Put goat cheese or feta in 1/2 of them, sprinkle some "greek" or "tsatsiki" seasoning on the cheese, and drizzle some olive oil on the cheese. Fold the dough over, making sure to get a good seal on the edge, and put it into a 350 degree oven for 25 minutes or until done.

Our family goes nuts for these. Here's some pics!

These are awesome hot out of the oven, and are quite good cold. Have fun with the filling and try putting your own stuff in there for homemade hot pockets.

I was told to do this, but with Greek women. However, the pickens were slim around here and I went anglo. The Greek community was devastated, but I kind like her anyway. =)
