One more recipe:
Make some bread dough. For me, I like breadmakers for their ability to painlessly turn out nearly perfect dough. I just set it on "make dough", throw in a cup of water, 2 tbsp of olive oil, a tsp of salt, 2 tbsp of dried milk, 3 cups of flour and 3 tsp of yeast, and 1.5 hours later, viola! Bread dough. If you don't have a breadmaker, shame on you; you can get them for free on trash day, or for $5-$10 at Goodwill. If you like suffering, use Betty Crocker or any other bread recipe and do it by hand.
Divide the dough into 4 equal sized balls, and flatten them as much as you can, or care to. Put goat cheese or feta in 1/2 of them, sprinkle some "greek" or "tsatsiki" seasoning on the cheese, and drizzle some olive oil on the cheese. Fold the dough over, making sure to get a good seal on the edge, and put it into a 350 degree oven for 25 minutes or until done.

These are awesome hot out of the oven, and are quite good cold. Have fun with the filling and try putting your own stuff in there for homemade hot pockets.
