Corn and Crab Chowder

Cook bacon in dutch oven and remove
Saute onion and garlic in bacon grease (salt and pepper onion and garlic)
In the meantime, steam crab legs.
Remove meat from legs and toss shells in water and bring to simmer.
Simmer for a couple of hours covered. Remove crab broth.
Cook corn and remove from cob
Add crab broth to sauteed onion and garlic
Hit that mixture with some seasoning salt, pepper, and old bay.
Add potatoes and cook in broth until almost tender.
Add a little cream to make soup creamier.
Add ground parsley and re-season with a little more seasoning salt, good dose of pepper, old bay and ground parsley
Add the bacon (3 strips) chopped
Add the corn
simmer for 10-30 mins
Let sit in fridge overnight.
Absolutely the best soup you'll ever have. Serve with a piece of crusty bread.

You could also make this soup thicker by starting with a roux. I prefer mine a little thinner.

Cream cheese potato soup.

Boil 4 cups of chicken broth, 4 diced and cubed russet potatoes, a small diced onion, a couple diced carrots, a little seasoning salt, black pepper, and cayenne pepper. While that's softening the potatoes, brown a pound of sausage. When the potatoes are soft, mash a few to release the starch. Add the sausage. Add an 8 oz brick of cream cheese (in small slices) and stir until it's melted.

Just a killer fall/winter recipe. I make it all the time up here with fresh baked bread.

I have a whole Pinterest board of just soup recipes. ;) Some faves are:

Cheesy chicken stew
hearty beefy stew
Tortellini soup with Italian sausage
cheeseburger soup

The cheesy chicken stew sounds delicious...can I get the recipes for the cheeseburger soup and chicken enchilada soup too

For those, like me, who like cheese and brats:

CHEESE AND BRAT STEW:

6 brats in ½ inch pieces
4 medium potatoes cubed
15 oz can green beans
1 small onion chopped
1 cup grated cheddar cheese
1 can cream of mushroom soup
1 4oz can mushrooms
1 cup water

brown brats, drain fat, add all ingredients, cover, cook on low for 30 min until potatoes are done

I make almost this exact same soup, but i use a can of cheddar cheese soup instead of the cup of cheese. i also add some corn too.

I've made this a couple times and it was amazing. There is a lot of prep though, and with all the seafood it gets expensive to make. In my experience it ends up making more than four servings as it says.

Spicy Portuguese Fisherman's Stew:

Ingredients: (four servings)
Broth:


  • 1 28 ounce can fire-roasted diced tomatoes
  • 1 8 ounce bottle clam juice
  • 1/2 cup water
  • 3 large cloves garlic, minced
  • 1/2 teaspoon crushed red pepper
  • 1/2 yellow onion, minced
  • 1/8 cup chopped fresh Italian parsley
  • 1/2 – 1 teaspoon powdered turmeric
  • 2 tablespoons olive oil
  • Salt and pepper
In a large soup kettle, heat the olive oil over medium heat, add onions, crushed red pepper and garlic. Saute until softened. Add the clam juice, tomatoes, water and turmeric. Simmer gently for 10 minutes. Taste for salt, pepper and turmeric.

Stew ‘Bodies’:


  • 2 Yukon Gold potatoes (or other waxy type), peeled and boiled until just tender and cut into wedges
  • 12 littleneck clams, scrubbed clean
  • 1/4 pound chorizo sausage, cut into long strips
  • 12 large shrimp
  • 1 pound fresh, firm fleshed fish (such as cod or haddock), portioned into four pieces

While the broth is simmering, boil the potatoes until just done and cut into wedges. Add the clams to the broth, and when they just begin to open, add shrimp, chorizo and potatoes. Stir and simmer gently for 5 minutes, adding water if needed. Taste for salt and pepper, stir well and set the fish into the stew. Poach the fish in the broth, spooning the hot liquid over the fish until cooked through. Be gentle with the fish so it does not break apart.

Sounds awesome, but really expensive to make (I have no idea how much crab legs cost).

Not too bad. I'll usually spend $10 on the crab legs. You don't need a ton. That's plenty to add to the soup and the shells are enough to make a good broth.

Granny's Ol' Fisherman Palatel Soup

Three cans of low salt clam chowder
One tin of clams
Two tins of tiny shrimp
20 scallops
One can of octupus or squid pieces.
One can of white or golden hominy
Throw in some salmon chunks.

Crockpot for 45 minutes till ten minutes boil.

Yum. Simple. Consistent. Filling. Nutritious.

Chicken Tortilla Soup
--Finely chop 1 white onion, 4 cloves garlic, and sauté in a stockpot with a tablespoon of olive oil until soft and tender.
--Add 1.25 cups water, 10 oz of chicken broth, a 28 oz can of crushed tomatoes, 4 tsp chili powder, and 1 tsp oregano. Bring to a boil, reduce, and simmer for 10 minutes.
--Add 2 cups whole corn kernels, a 15 oz can of black beans, a handful of fresh chopped cilantro, 1.5 lbs diced chicken breast (uncooked), and some chopped chile peppers to taste.
--Simmer for 15-20 minutes.
--Serve garnished with chopped scallions, avocado, shredded jack, and some tortilla chips.

I've also got some great recipes for corn chowder, ham and potato soup, and turkey chili, but I'm too lazy to do them right now. I will recommend a great recipe for bread bowls, though:

I made a real quick and easy taco soup a few weeks ago.

1 49 oz can Chicken Broth
1 lb ground beef
1 package taco seasonings
1 16 oz jar mild picante sauce
2 12 ounce packages Kroger Mexican vegetable mix

Prepare ground beef and taco seasonings per package instructions.

Mix all together. Over medium heat, heat to just starting to boil.
Turn off.

Let cool overnight and skim any fat left over from the beef.

Heat and eat
Can add some crushed tortilla chips or torn tortilla to it if desired.

Potato soup recipe

3 cans of chicken broth
2 cans of cream of chicken soup
1 bag of southern-style hash browns, frozen
1/2 lb of bacon, cooked and crumbled into bits
4 oz of cream cheese

Combine broth, soup, hash browns, and bacon into crock pot. Cook on low for 8-10 hours. An hour before serving, stir in cream cheese until smooth. Done.
Any idea on what size bag of potatoes?
