I can't find the version from Spotify that we used at our wedding, but:

I want to mention that, although a lot of people hear "I Will Always Love You" strictly as a love song, it's actually a goodbye song written with love. Dolly Parton wrote it as a farewell message to her long-time professional partner and mentor, Porter Wagoner, with whom she recorded and appeared on his variety show that began in the mid 1960s. She knew it was time for her to go out on her own as an artist and wanted Wagoner to know that she was forever grateful for the opportunity he gave her. The original 1974 recording went to #1. Dolly re-recorded it for the 1982 film "Best Little Whorehouse in Texas," and it went to #1 again. Then, we all know what happened with "The Bodyguard" soundtrack. Here is the 1974 version:

That seems to fit.
Is it really a "love song" or a meta-commentary on three-minute radio-friendly pop and rock love songs from the late 1960s and early 1970s, though?
Why not a love song actually called Valentine's Day?
I love the piccolo trumpet and trumpet duet in the middle of it.
I'm happy to say I'm in this video as I was at the show where this was recorded. I'm the guy about 12 rows back on the left wearing the Cyclone shirt. I'm kinda hard to see.
