Pepper Jack
This is my sandwich go to. And speaking of sandwiches, I just discovered this mustard recently:

Highly recommended.

My contribution...

Best cheddar - yellow (Wisconsin) or white (Vermont)?
Cottage cheese - small or big curd?

Neither - I'm lactose intolerant and cottage cheese most of the time isn't worth me chewing on a lactase pill just to digest it. Although the correct answer used to be small curd.

Pepper jack, sharp cheddar, and deli-sliced yellow American. And for my Italian half, provolone, mozzarella, and ricotta (which most of the time IS worth me popping the lactase pills).

All kinds are great.

Most find it disgusting, but I love limburger on toast with butter and honey mustard.

I can't copy and paste the link from where I am, but look up Monty Pythons "The cheese shop sketch." A real classic

My cheese preference depends on what I'm eating with it. Although 95% of my consumption is mozzarella or colby jack.

I could open a bag of shredded mozzarella and just eat the entire thing. If I'm eating off a block of cheese, I much prefer colby jack.
