Tailgating Recipes/Ideas 2008 edition

It's that time of year again. What are some good, easy tailgating recipes? Labor Day is also coming up, so fresh ideas for grill recipes would be nice to know.

I'm having smoked Brisket on Thursday. I'll apply my 'secret' dry rub, give it two hours of smoke using hickory/apple and peach chips then I'll wrap it in tin foil, give it a cup of beer and a handful of kosher salt, wrap it up tight and let it slow cook for an additional 8 hours. Let it rest for 20-30 minutes and then it's eating time.

Granted I won't be at the game, but I'll be sitting on the patio pretending to be tailgating.

I'm doing this for burgers:
1 lb of beef
2 garlic cloves
Onions and peppers (amount and variety up to you)
one egg
handfull of bread crumbs
seasoning salts/spices (again, do your own thing here)

I'll be doing all the prep work wednesday night. Chop the onions, garlic and peppers up very finely, and sautee them in olive oil with some vinegar until they are soft, and then mix them with the beef along with the egg and bread crumbs (holds everything together, and makes it easier for forming patties) and your desired spices. Mix it as evenly as possible, and shape into patties. Top it off with some pepper jack, and wash it down with an Olde Main Off-Kilter (at least this is my plan) and you have a winner! As far as the pepper/onion/spices go, I'll be using red onions, fresno and jalapeno peppers, lawry's, garlic salt, chili powder and worchestershire sauce.

Those sound excellent. I suggest mixing in some bacon and cheddar sometime as well if you haven't tried it. Do you find the higher fat (80/20) works best for holding the patty together or do you go with a more lean ground beef?

Ever tried doing a shrimp boil?

Shrimp, kielbasa, corn on the cob, potatoes, and whatever else you want to throw in. Pretty tasty....

I'll actually be using venison that has been mixed with beef tallow. It retains that leanness of venison, but it actually tastes just like beef. I think higher fat beef holds together better, but if you use the egg and bread crumbs, it does the trick w/out sacrificing leanness. You can also use and kind of ground meat you want. For example, I've used ground pork before and it turned out really well.

Since I won't have enough time for prep I thought I'd just go with homemade guacamole (sp?) dip with On The Border chips. oh, and beer!
Have to admit though, the pineapple brats someone else mentioned sound mighty fine. And beer.

I'm trying to think of something really good for the ISU/iowa game. Possibly Hellfire wings or something. And beer. :wink:

I'm a big fan of the Butthole Chicken/Hawk for Iowa games. It's very easy and one of the best tasting chicken dishes you'll ever have. It also provides for a lot of good jokes around the grill.

CFers, Iowa State tailgating is in my opinion the best in the nation. Tailgating, great food and friendly people is synonymous with Cyclone football. Be good hosts to your friends, extend hospitality good food and good beer to strangers and visting fans! Be bold in your menu choices. Wow people at JTS. Cook like champions!

Haven't decided but leaning towards something pork probably. Last year I did hobo dinner which was yummy. Take some ground beef and you can either crumble it or make it into balls or patties, coat some tin foil with olive oil and cut up some onion, carrots, peppers, or whatever veggies and raw potatos either cut in squares or steak fries. put some cheddar cheese and seasoning and roll up into a tin foil pouch. Grill till done, usually have to turn it several times and cut into it after awhile to check. Very yummy, can pretty much alter the ingrediants and seasonings to your taste too.

Wont be grilling this weekend... But will be drinking.

Week 2 I am going to do Baby Back Ribs....

Still trying to perfect the method. My grill will cook them in 2 hours if wrapped in foil. Just need to find the right rub and bbq sauce combination. Along with this I'm thinking some baked beans and maybe some sweet corn.

for appetizers i do chicken wings with two different sauces that i tweak on my own - hot and teriyaki. I grill the wings/legs first, then dip and gril some more turning frequently so the sauce doesn't just burn on the outside. This year adding grilled jalapeno poppers with a mixture of cream cheese, cheddar cheese, and some tastefully simple taco ball seasoning, covered with a piece of bacon to keep it all in - if anyone wants to try one find me in G7.
For dinner it will be chicken kabobs for the g/f and i'm not sure for me yet - either brats or burgers, maybe one of each just to be safe :) I prefer handheld foods over steaks for tailgating.

This is not a grilling recipe, but one of my favorite things to make at home before tailgating is a chili dip. Simply make whatever kind of chili you like best, then as it's done cooking and simmering, slowly mix in flour. It will thicken up and take on the consistency of a dip.

My favorite is a white bean chicken chili with lots of small peppers.

Last year at the Iowa/Iowa State game i had an idea for a large group of people. They make crock pots that run off of propane - so heat up your meat and get some bags of chips and walking tacos would be pretty easy, not a lot of mess, people can grab a bag and still walk around, play games, etc. And if you have kids it would probably be a good idea too.
