My Christmas Prime Rib turned out damn near perfect. Thought I would share it with the rest of CF. (I originally posted in the Random thoughts thread)

Looks awesome. We did our own today (my first) and, while not perfect, it was really really good. And we have some leftovers for the rest of break. Glad yours turned out well.

How long did you cook that for and at what temp? Inside looks good, but outside looks a little under done. I guess I'm used to ours coming out pretty black, and damn I love those bark pieces.

I had Prime Rib today as well. I did not cook it, but did look at it and say that it looks like it is perfect. And you know what? It was.

That's only like a 3-4 lb rib roast at most. I bought a whole rib and roasted about 2/3 s of it. Only took a before shot, started drinking, then forgot to take an after shot.

What I do is put the prime rib/roast out for a few hours while it gets to room temperature. Then I rub the entire thing with Dijon Mustard. Then I sprinkle/rub the roast with a spice mix of:
1TBSP each of Rosemary, Thyme, sage and coarse black pepper.
0.5-1 TBSP Salt depending on how you like it.

Put it in a 200 degree oven for 4 hours or until it is 130F. Remove and rest for 30min. Preheat oven to 500+ degrees while it rests. Then put in 5-10min depending on how you like the crust.

Perfection

4 hours at 200F until internal temp is 130F. Rest 30min. Then about 7min at 500F to get that crust (agreed it didn't quite meet my expectations for outside).
