Pecan Pie

Pecan is a high ceiling low floor pie. It can be elite or disgusting slimy gel.

It has been climbing my list.
It's one of those things that you can't bake by time, you have to go by how much it jiggles. Kinda like barbecue. The time is a guideline, but it HAS to hit a certain temperature for the chemistry to take place. We've had some that had to bake for nearly 2 hours but still came out amazing. Other times it only take 45 minutes.

Why do I picture you having a bottle of rum, putting a teaspoon in and drinking the rest?
Maybe 40 years ago before I had a bad experience trying to console a friend who got dumped by her boyfriend and wanted to continuously drink rum sours.

I do eat the orange after I zest it.

I wish to add strawberry-rhubarb to the list of excellent choices. My mother‘s pies were the quality that won awards, ( she could make the perfect crust ). My wife limits hers to graham cracker crusts. Having said that she does have a summer fruit pie that is always a winner.

So I just had pecan pie last night with a little whip cream on the top. First time ever. Might be the best pie I have ever had. Anyone agree with that?
I’m pretty sure you are a CR guy. Kathy’s Pies in Cedar Rapids’ pecan pie is literally heaven on earth.

It’s more corn syrup and brown sugar than nuts. I like to make with a dash of rum and/or orange zest for a hint of something besides nuts and sugar.
The ones I'm familiar with use maple syrup. Not brown sugar or corn syrup.

And I also never tried it until later in life. It was my Dad's favorite. I was always going for the ones I KNEW I liked rather than try a piece of something I may or may not like.

It's good but like others have said, too sweet. Need a good glass of milk afterwards to offset that sweetness. Or probably coffee if that's your thing (not mine).

Too many apple pies are too sweet as well. You need a tangy apple with the right amount of sugar to balance it out.

I've about given up on store bought or restaurant apple pie. Seems like cherry is a rising star for me.

Pumpkin if that's all there is. Then it needs an equivalent volume of cool whip to pie.
