We are going to mirror the football team for the 1st tailgate this year. Burgers and dogs...keep it simple to get us back into form while not giving away too much for future tailgates.

Something we did last year for a couple of the morning games were omelets in a bag. Put a couple of eggs into a ziplock bag, add your favorite ingredients, boil for a few minutes and eat. They are delicious.

If anyone is doing a Shrimp boil, I will be there!

We did a boil last season at the UNI game. The people that had it said it was one of the best tailgates they've been to, but we also had a lot of people who weren't real keen on seabugs (shrimp and crawfish). We had a LOT leftover.

If there's enough interest again this year, I'll do it and make sure to let you know.

Rabbit Stew

Rabbit stew recipe includes rabbit, onions, celery, carrots, potatoes, mushrooms, and red wine. Ingredients:


  • 1 rabbit, about 3 pounds, cut up
  • 1/2 cup all-purpose flour
  • 3 tablespoons butter
  • 1 cup chopped celery
  • 2 medium onions, thinly sliced
  • 1 teaspoon seasoned salt
  • 1 teaspoon salt
  • dash pepper
  • 1 bay leaf
  • 4 cups water
  • 4 cups dry red wine
  • 2 cups diced carrots
  • 4 medium potatoes, peeled and diced
  • 4 ounces sliced mushrooms, sauteed
  • 1/4 cup all-purpose flour
  • 1/3 cup water
Preparation:

Directions for rabbit stew.
Dredge rabbit pieces with 1/2 cup flour. Melt butter in a Dutch oven over medium heat; brown rabbit pieces on all sides. Add celery, onion, salt, pepper, bay leaf, 4 cups water, and wine; bring to the boil. Reduce heat to a simmer, cover, and simmer rabbit stew for 2 hours. Add carrots, potatoes, and mushrooms; cook for about 25 to 30 minutes longer, or until vegetables are tender. Combine 1/4 cup flour and 1/3 cup water; stir until well blended and smooth. Stir flour mixture into the broth; cook and stir until thickened.
Rabbit stew recipe serves 4.

This is not a grilling recipe, but one of my favorite things to make at home before tailgating is a chili dip. Simply make whatever kind of chili you like best, then as it's done cooking and simmering, slowly mix in flour. It will thicken up and take on the consistency of a dip.

My favorite is a white bean chicken chili with lots of small peppers.

That's great to know! I've got a Graziano chili I make that I will try this with.
