  • If you get the nerve, try separate the point and flat. It is really hard to get comfortable doing it. Then you can smoke each to the same internal temp. Also I don't have any shame, after 6-7 hours it is smoked. In the winter I finish in the oven at the same temp as the smoker. Good luck.

    I've separated the point and flat a number of times as it really cuts down on pellet use and cook time. It does take some time though to get it separated. I have a thermal blanket on my GMG DB and I smoke year round. Anything around 12 lbs or so I will not separate as the point is small. I think the point has more flavor than the flat does. Appreciate the comments!!
