Don't use egg but the small curd cottage cheese adds more moisture than ricotta. My lasagna gets rave reviews so hate on haters. Also use Italian sausage instead of hamburger and ad cream cheese.

Cottage cheese belongs in lasagna. The biggest thing is using sausage instead of hamburger like you said though. Even if it’s not Italian sausage, using regular pork sausage is infinitely times better than burger.

This is what I use too. The only chunks I want in my lasagna are sausage chunks. No curds that look like someone blew chunks. And use egg and cream cheese with the ricotta so it is smooth but binds enough that it doesn’t ooze out when you slice the pieces.

My Lasagna Truth:

I grew up with pork lasagna with ricotta.

I learned to like beef in lasagna after a trip to Australia.

I never heard of cottage cheese in lasagna until this thread.

I just asked my Iowa born wife if she had heard of it, and she said: "Yes, and it is good." She also swears by Graziano sausage.

The things one learns on a random Saturday morning in the land of Iowa!

I use a 50/50 mix of hot Italian sausage and seasoned ground beef that the wife likes.
