These were some of the things I quickly thought of off the top of my head. We do want to go to a lot of those National Parks at some point.
If you're thinking of Utah, and are into paleontology at all, Dinosaur National Monument is a pretty cool stop. It straddles the borders of Utah & Colorado. Covid restrictions require you to have a reservation for the main exhibit hall (to limit # people inside). Lots of cool fossil stuff.

If you go to Utah, try and visit Monument Valley. Some pretty spectacular vistas there - John Ford filmed many of his classic Westerns, including The Searchers, there. It's further south along the border with Arizona. We drove through it as the sun was setting, some of the colors were unbelievable.
One off the beaten path place we just happened to stumble into is called Valley of the Gods. It is pretty much on the Utah/Arizona border near Mexican Hat. We drove through on the unpaved roads and saw a car now and then but we had every stop entirely to ourselves. It was my favorite part of the trip.

Since my Destin trip is canceled the week of Thanksgiving, my wife and I are moving that week of vacation up to the week of October 26th-30th. We have no plans yet still want to do something. Everyone was plenty helpful when we went out to SD/WYO in July, so what does everyone suggest now?
Utah is a very cool place to visit with all of the national parks. It's hard to go wrong no matter what part of the state you visit.

I've always wanted to visit Vermont during the fall.

Next year I want to ride out to the ISU vs Vegas football game and try to go though a few of the National Parks in Utah
I'm flying out for that game. Being a LV Raiders fan, I'm hoping they both play the same weekend, but I have no problem with staying a full week to hit up both games. If I have to stay the full week, I'm going to try to go to as many National Parks in that area as I can during that week.

That's unfortunate. That'd be one fun roadtrip.

Yeah...
We started planning the route in January. All of our travel plans have been busted this year. Last time we went anywhere was to the Bahamas last November for the Battle4Atlantis. :(
Before our trip out to SD/WYO, our last vacation was Bahamas in March of 2019. The SD/WYO trip was decided on a whim since we figured we wouldn't be making the trip down to Destin this year. If we don't go anywhere in October, it'll be next May or June before we finally go somewhere else again.
