bahahaha. not quite there brotha. Like every other good HRI student, I am a sales rep. and it is awesome. I just don't embarrass myself when i have to go eat with customers or other employees.

new york medium rare with just salt and pepper only let the juices and the earthy beef flavor come through.

No love for the filet? The tenderloin is the best hunk 'o meat on the critter, might as well carve my steak outta there. And cook that bad boy medium if you please.

Archie's in LeMars has a 20-some oz filet that's not on the menu. Dang good eats. Its like the size of a small cake and cuts like butter.

Forgive me if people have voted for filet in the poll, which I cannot see in the mobile version. Just going by the responses so far.

Agree 100%. If price is not an issue, the hands-down choice is filet.

I sure voted for the filet.

However, cooking one medium is wasting it. They should never be cooked over medium rare, might as well get a sirloin if you do that. Any steak snob will tell you that. Remember folks, red meat only needs to be 'sanitized' on its surface. You can actually eat raw cow as long as it was handled by clean tools.

I like mine way rarer than most steakhouses will serve at; still refrigerator cold in the middle, greyish on the outside to maybe 1/8" in. The rest, raw.

I think Alton Brown's skirt steak marinade and cooking technique is the best beef I've had - you cook directly on the coals for 1 minute and then wrap in foil for a short time before slicing and using in fajitas or just eating straight up. We make this a dozen times each summer - especially with guests over.

Beyond that I love a NY strip or a ribeye grilled in a classic italian way: super hot grill and get the steak just to medium rare. Then drizzle just a little olive oil, rub some fresh crushed garlic and some fresh diced rosemary on it, sprinkle a pinch of coarse sea salt on it and serve it. The garlic and herb really contrasts nicely to the flavor of the beef. So delicious.

I'm really surprised at all the vocal sirloin proponents. That's like saying your favorite type of vodka is Hawkeye Vodka, or your favorite beer is Milwaukee's Best. To each their own.

High dollar steak joints don't even have sirloin steaks. There's a reason for that.
