I love a good hot sauce, and I use it for lots and lots of applications. But it has to be more than just heat. It's got to bring some flavor to the table.
I'm a big fan of Cholula's products, specifically their chipotle and chili garlic varieties.
And the original Huy Fong Sriracha is a staple for certain dishes.
I also really like Trader Joe's Green Dragon sauce, which is basically just pureed jalapeno and garlic.
And throw in some Mike's Hot honey, for good measure.

I know that there are plenty of other options that have their fans, but those are the ones I keep.

What kind of hot sauces are in your fridge/pantry?

There used to be a hot sauce outlet store in Altoona but that sucker didn't last long.

I still like the old school Tabasco on eggs.

This stuff is really good but not super hot:

Tiger Sauce is very good with a bit of sweetness:

Not a sauce but I've been making a dry rub of Old Bay and a few other ingredients to make it a bit less salty.

Yellowbird Habanero Condiment
Alvin's Caribbean Hot Sauce
Cholula Garlic
TJ Green Dragon
Any Lola's although they're a little runny
Melinda's Ghost Pepper
Lao Gan Ma Chili Crisp
Huy Fong Chili Garlic Sauce

I've been lacto fermenting for a couple of years and have had really good luck with that. The hot sauce is awesome and you can either reuse the brine or use it as an acid in cooking. I've even made some really good fermented chili powders. It sounds intimidating but it's incredibly easy.

There are some competition BBQers out there who uses Tiger sauce as part of their glazing mixture.
