What do you have on the menu for the big game?

I have some chili in the crockpot and I’m smoking some wings. I’ll coat the wings in a BBQ rub and baking powder. Smoke for a bit then transfer to a hot grill to crisp them up.

Gameday food pics are encouraged.

If you want to use just one tool for wings, the 0-400 method yields great results.

Oh, if you haven't had it, I picked up a bunch of bags of popcorn from a place in Huxley by Fareway.
Good stuff. You can get like 4 small bags for $20.

It works best for pellet smokers, but you throw the wings on a cold smoker, then heat it up to 400 degrees while the winds are on, basically skipping the preheat. You get some smoke on the front end while it's cooking at low temp, then the skin gets crispy on the high temps. Takes just under an hour on my smoker, but the time it takes will likely vary.

Does the initial smoke during preheat give it a bitter taste and lots of soot? Or should I turn it to 180 before putting them on?

I haven't tried the true 0-400 on my pellet, but once startup is complete, I throw them on. So, the smoker is still cool when they first go on. I might try starting at a lower temp for a few minutes before cranking to 400. I worry about the bitter smoke as well.

Made some home smoked pulled pork and had some nachos with Jimmy’s BBQ sauce as a pre-pre game snack. Putting some Texas Twinkies on the smoker around 3. IMG_4750.jpeg
