A piece of clear tape on the bottom of the mouse also works wonders. A quick glance may not notice the tape, but it will render the device useless.
I believe that Windows has keyboard shortcuts for rotating the screen. Flipping someone's screen around will drive them nuts if they don't know the easy fix.
Another good one is to take a screenshot of their desktop and set it as their background. Hide all the desktop icons and set the start bar to auto-hide. Even better, then move the start bar to a different side of the screen (e.g., from the bottom to the top). Make sure the mouse isn't visible when you take the screenshot, though, or the gig is up.

The "Winders 95" auto-correct prank is one I've pulled multiple times, albeit with different words. It's really funny if you use it to change someone's name
Also, one of my favorites is to take a screenshot of someone's desktop, set it as their desktop background and the remove random icons, leaving their picture in their place. works great on people who aren't too savvy.

Years ago, our IT department didn't disable the NET SEND command in DOS. We used to send random messages to other people on the floor. Most of them didn't know where the messages were coming from, so we would send the messages and identify the messages as coming from their own computer.
For example there was a lady who was a really hard typer. You could really hear her pounding the keys. We would send a NET SEND message of "Ow, that hurts!! Please don't press so hard on my keys".
Another was to have to comment on what certain people were wearing, or to tell the person to go take a break because the computer needed a rest.

I'm a Vikings fan and my buddy next to me was a Packers fan. Once he left briefly and forgot to lock his computer. I installed a Vikings screensaver with video and sound and password protected it so he couldn't change it back for a few days.
I was working on a report for school and left to go to the bathroom. When I came back to the computer, my Microsoft Word Document was blank. I asked my roommate what happened, and he didn't know. He asked if I saved my work and I didn't. Come to find out, my roommate changed the font color to white hiding all of the characters. Took me a while to figure out.
I love the commercial when the guy sends a "dirty" e-mail to his buddy and he tells him he replied to ALL in his e-mail...so he proceeds to track down each employee to bat their cell phones, computers etc... out of their hands, only to find out his budy was joking.:twitcy:
Maybe it's just funny to me because I get nervous that I will do that sometime!

Some of the computers here have hot keys that if you press a certain combo such as control-alt-shift and an arrow key it will rotate the monitor 90 degrees. I work in IT so my group has a lot more administrative priviledges to do things the normal users can't. I had co-workers put sccript in my start up folder that ran when I logged in that would either open something up or immediately reboot my PC and such. The worst is one of those pranks backfired on 1 guy and completely hosed my OS up to where I had to reimage and I was not a happy camper that day! I got him back though, I made something that opened a bunch of apps all at once on startup and even if he deleted that sccript there was another hidden file that the sccript ran that when he logged out it would put a copy of the sccript he just deleted back in his startup folder again and repeat the annoying thing again when he logged on next time.

I have to say these things being the top 10 wacky pranks doesn't help the IT professional stereotype very much.
