I’ve lived in 12 different towns including multiple under 1000 people. I also spend A LOT of time on the road in rural areas. Yes, there are less good options for lunch in a smaller town. Is that even debatable?

How many options do you need? How close are they to work? How many days do you go out to eat lunch? How long is your lunch? How much are you willing to pay to eat out for lunch every day? Unless you go out for lunch every day, a couple of options is all you need.
Old pizza parlor style Pizza Ranch is > todays Buffet style PR. PR used to be damn good pizza back in the 90's.
I guess I've only been to the newer style ones. Everybody loves their chicken but I've never been a fan of that either. Haley's deli in north Marshalltown has some killer broasted chicken.
Sure, if you want to eat the same food from the same two or three places every time you want to go out. Or go get some food and drinks after work at the same bar.
I'm willing to bet most people would enjoy having options for whatever they're feeling like that day. It's the same reason a lot people travel into the Des Moines area from surrounding towns for dinner and drinks.

Son is an engineer at an aviation manufacturer. Gets a half hour lunch. Usually takes his lunch, maybe eats at cafe there, can barely get lunch in half hour if he picks up Chinese a block away. It doesn’t seem like a huge deal to move a company. I don’t think they are going out for fine dining in a half hour. Probably just a move for a few higher ups who take a two hour lunch every day and spend the other six hours on social media.
Back then they had a heavy presence in SD and MN. There weren't that many locations in NW IA from what I remember.I've learned something new. I had no idea about this.
