That's where I am. I'm good at following recipes and over the years have modified a lot of our favorites to the extent that I'd like to call them mine. But if someone just handed me a basket of ingredients and said create something original and amazing, nope. I'd end up making something that would probably taste pretty good but all in all would be very ordinary. Learning techniques and flavor profiles and what goes together and what doesn't go together and how to elevate ingredients would be pretty great. Like, I know one ingredient Flay has said he uses in almost everything to some extent is anchovies/anchovy paste. I'd love to know the "why" behind stuff like that.I'd love to be a better cook/chef. I can follow a recipe, but I sometimes wish I was better at just making things up.
