Brussel Sprourts, Aspargas, any melon but watermelmon. Tomatoes, Onions, Red and Green peppers. Jalapenos and the like are great.
Oven roasted brussel sprouts halved and coated in olive oil and Italian seasoning mix is a regular go-to for our dinner veggie. Deelish.

I've been obsessed with shredding brussels, adding some slivered almonds, dried cranberries, and a vinaigrette. It's like that old scrubbing bubbles commercials, but the bathtub is my colon getting scrubbed my little strands of brussel sprouts.
If you have a trader joes nearby they sell shredded Brussels.

Any mayonnaise based "salad". Macaroni salad? Gross. Potato salad? Barf. Egg Salad? Straight to jail. Chicken salad? No. Mayo coleslaw? Heathen.
It's so funny, I hated all that stuff as a kid and young adult, but the older I get the more I find out I like it all.

My daughter was our picky eater. My son on the other hand... Well we have to take his plate away to make sure he doesn't eat that too.

Our daughter was finally able articulate that her problem with a lot of foods was the texture. Oh come on... Well it is actually a recognized issue with a fair amount of people.

My mother was NOT a good cook.

And I also did not want any of my food to touch each other. (I'm also not a big fan of most casseroles.) I'm fairly tolerant of the food touching now, but don't allow any juicy or wet food item to soggy up a bread item.

Salads and deserts should be in separate bowls/plates whenever possible.
