What is your favorite recipe? Something easy with not a ton of prep time. Post directions or links to your favorites.

Mine is steak taco's.

Flat iron steak, red cabbage, garlic, couple of limes, monetary jack cheese, cilantro, green salsa

Chop cabbage and garlic, put in a bowl, squeeze limes over top and let sit. Grill steak to taste and let rest. Cut steak, add cheese, cabbage, cilantro, and salsa on a flour shell.

Just awesome, not sure if it's the cabbage and limes or just a combination of all the ingredients but one of the best meals I have made and we eat it on almost a weekly basis.

Chinese steak
32 oz tomato juice
1-3 sliced green pepper (depending how much you like them)
1-2 large cans diced tomatoes (again, how much you like them)
1/4C soy sauce + 1TB soy sauce
1lb cube steak
1/2tsp ground ginger
1TB cornstarch
2 TB Olive oil
(we make this in an electric skillet, I think a crockpot would work as well)
Marinate the cube steak in 1/4C soy sauce and a bit of sugar overnight or at least a couple hours. Heat oil in skillet, add ginger. Once heated, add and brown steak.
Add tomato juice, peppers, 2nd soy sauce amount. Reduce heat and simmer for 1-2 hours, checking and stirring occasionally.Mix cornstarch with equal parts water and add to thicken. Add soy sauce to taste, if desired.

Serve over rice or noodles.

Steak tacos for me as well, but different recipe. I use a grilled corn tortilla topped with meat, guacamole, and shredded cheese.

Meat:
Flank steak rubbed with kosher salt, cumin, and ground red pepper. Marinate in lime juice for 3+ hours. Grill medium rare, let it rest for a while, and slice it thin.

Guacamole:
Make salsa with tomatoes, onion, garlic, lime juice, cilantro, and jalepeno pepper. Mash with avocados.

The key is grilling the little corn tortillas... you spread the guac, add the meat and cheese, and they're almost like little taco sliders.

I think we will try this, maybe this weekend, we have about a half pound of shrimp in the freezer although I'm sure fresh shrimp would be a lot better.


we use frozen and they're just fine. Don't overdo it on the chipotle powder. Only made that mistake once! Also, we love garlic, so we use more cloves.

just something to try, replace your jack cheese with some queso fresco. That stuff is amazing. It doesn't melt, just kind of crumbles. Goes very, very well with beef, and pork for that matter.

One of my favorites is pork carnitas. Rub down a Boston butt with cumin, oregano, corriander, and cinnamon, and braise it all day in a little bit of chicken stock, garlic, and a couple of bay leaves. makes the whole house smell awesome. When it just falls apart, shred it. Goes great in tacos, but does equally well in sandwiches, breakfast burritos, nachos, whatever you can think of.

Italian beef -

Bottom round roast
packet of dried italian dressing mix
can of beef broth
jar of pepperocinis

Mix all but roast together in crock pot then add roast. Cook for 4 hours, remove roast and slice and then add back to the crock pot for an hour. Should shred easily. Toast some hoagie buns and add some provolone cheese (I like horseradish sauce too)

Roast beef and dumplings (Bisquick)

Take leftover roast beef and cut into pieces and put into a pot.
Add baby carrots
Add beef broth to cover meat and carrots and season with salt/pepper.
Put the lid on and bring to a boil.
Meanwhile mix the Bisquick with milk.
Once boiling follow dumpling instructions. Cook with out lid and then finish with the lid.

YUMMMMY. A small pot usually is two meals for two people.

Broccoli, carrots, and rice...

Cook the broccoli and rice... Shred the carrots. Make garlic sauce consisting of heated up butter and pressed garlic... Serve rice on the bottom, then add the carrots on top, then the broccoli, then drizzle the garlic/butter sauce over it all.

DELICIOUS, and pretty good for you too.

Another favorite. Sausage and goat cheese pasta.

We use graziano sausage (recipe calls for a sweet sausage)
green pepper and a couple garlic cloves diced
dozen grape tomatoes halved
spices to taste (we go heavy on the red pepper flakes and Italian seasoning) also these measurements are off the top of my head
1/8 teaspoon black pepper
1 teaspoon red pepper flakes
1 1/2 teaspoons Italian seasoning
dash of salt
penne pasta
cheese - the more the better
goat cheese, mozzarella, parmesan
8 oz. can tomato sauce

cook sausage till almost brown, add veggies and seasoning and cook for about 5 min, add tomato sauce and simmer for about another 5 minutes. Add your cooked pasta, stir in really well. Put all of this into an oven safe dish. Add cheese and stir into sausage and pasta. Slide into a 350 degree oven and cook till cheese is melted.
This is staple of our winter time meals and is highly recommended. Send me a pm if you want the exact recipe, again this is off the top of my head.

I am definitely going to try this next time. Seasoning is almost spot on as the one we do, just use black instead of red pepper. Have never been a huge fan of corn tortillas, but that may change with grilling them. Excited to try.
