YOu don't even need to plan a trip, just go and you will find plenty to do. There is so much tourist crap in that area anymore that you'd have to try to be bored. I grew up there and didn't actually do a lot but its been nice bringing people back in recent years and getting to play tourist a bit. I don't gamble, however.

You gotta go to Swearingen's Steakhouse and have a bowl of Buffalo Chili and the parmesan crusted sirloin. It's worth the 10 hour drive alone. And try fishing the streams there, beautiful (see my avatar), plentiful, and not a lot of pressure.
