South Park has been consistently good for 28 years now, and has only gotten better with age. The Simpsons was good for the first 7-8 years and has been consistently meh since then.

south park had to bridge the gap between starting as a DIY cartoon on cable tv (not mainstream fox) and converting to a quick turnaround digital format that mirrors the changes in media formatting and artistic movement during its lifecycle.
the simpsons road the coat tails of the other fox sunday night shows and the NFL for at least 2 decades.

I agree that SP has been more consistent for its entire run. And I could argue there may be better individual shows in SP than Simpsons, but I could argue the other way too.
Golden era Simpsons is some of, if not arguably the best, TV ever created. Which is why Simpsons consistently shows up in at or near the top of all time lists.
