I think I will be cooking this up while tailgating next year

It's all bacon and sausage so it should be good. I suppose if you limited yourself to one small portion, it wouldn't kill you but what fun would that be?

I hadn't checked out the Super Bowl food thread so I didn't realize someone had already posted this. I agree with your comment. I think it would be better in a small dose with something to try and counteract all the grease.

I made one this weekend, and it was really good! Not something you would want to eat more than once a year cuz I think it will sit in my stomach for about a week. Cook it at a low temp for a couple hours and its amazing!

I have made about five different kinds the past year.

My favorite is instead of cooked bacon in the middle, I sauted onions and portabella mushrooms and let them cool. Put a layer of cream cheese on the sausage and then layered the onions and mushrooms. Roll it up and slow cook.

See, that sounds a little better. Because at least you have things inside it cancelling out the meat. With the Bacon Explosion thing, it's just meat on meat... And you feel your arteries clogging up lol... I felt like such a fattie all day today!
