Gumbo's fantastic but getting the roux right is a bit more work than a normal soup. The plus side is that I get to talk with a Cajun accent for that much longer.I don't really change what I eat much, but chili or gumbo are good cold-weather staples.
Gumbo doesn't get enough love in the north, but it is fantastic. Along the same line, a shrimp boil (shrimp/corn on the cob/sausage/potatoes/crawdads) is an easy fix and good for keeping you warm.
