I miss Wartkniight's Best Things I Ever Ate threads, and I need soup and or stew/chili recipes.

So what are your favorites?

Potato soup recipe

3 cans of chicken broth
2 cans of cream of chicken soup
1 bag of southern-style hash browns, frozen
1/2 lb of bacon, cooked and crumbled into bits
4 oz of cream cheese

Combine broth, soup, hash browns, and bacon into crock pot. Cook on low for 8-10 hours. An hour before serving, stir in cream cheese until smooth. Done.

I have a whole Pinterest board of just soup recipes. ;) Some faves are:

Cheesy chicken stew
hearty beefy stew
Tortellini soup with Italian sausage
cheeseburger soup
chicken enchilada soup
italian wedding soup
chicken wild rice stew

I can get recipes if any of those sound good.

Best soup I ever make is without recipes. Throw in whatever leftovers you've got with lots of onions and garlic and cook it over low heat for a long time or in a slow cooker.

Those all sound good. I must be hungry, never heard of it, but I could go for a bowl of Cheesy Chicken Stew or Tortellini soup with Italian Sausage.

One of my favorites is a chicken rice curry soup.

Chicken, brown rice, chicken stock, can of tomatoes, chopped onion, curry powder, etc.

Don't have a recipe but when I get a soup craving, I think Hickory Park's French onion is some of the best.

The one time I tried that was the first year we were married...it was sooo very very bad.

Cheesy Chicken Chowder

2 c. chicken broth
2 c. diced potatoes
1 c. diced carrots
1 c. diced celery
1/2 c. diced onion
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 c.(1/2 stick) butter or marg
1/4 c. flour
2 c. milk
2 c. shredded cheddar cheese(8oz)
2 c. diced cooked chicken(you could easily substitute ham or turkey)

In 4-qt. saucepan, bring chicken broth to a boil. Reduce heat and add potatoes, carrots, celery, onion, salt and pepper; simmer, covered, 10 minues.
Meanwhile, in a medium saucepan, melt butter; add flour and mix well. Gradually stir in milk; cook over low heat until slightly thickened. Stir in cheese and cook until melted. Add cheese mixture and chicken to vegetable mixture. Cook, stirring, over low heat until all ingredients are heated through.

Tortellini Soup:

Ingredients:
3/4 lb Italian sausage, crumbled & cooked
1 can (14.5 oz) Italian seasoned stewed tomatoes
1 can (14 oz) beef broth or stock
1 3/4 cups water
1 (9 oz) pckg fresh or frozen mini cheese tortellini
1 can green beans, drained
2 green onions, sliced
Grated Parmesan cheese

Directions:
*In 5-qrt pot, combine sausage, tomatoes, broth and water.
*Bring to a boil over high heat.
*Reduce heat to low once boiling.
*Stir in ravioli, green beans and onions.
*Gently cook until ravioli are cooked through. NOTE: if soup is rolling boil at this stage reduce heat or ravioli can burst
*Season with black pepper to taste.
*Serve sprinkled with Parmesan cheese if desired.

(I used frozen meatballs to cut down on the prep, added some spinach, and used another small pasta)

The great thing about soups is you can add different ingredients to recipies to your liking.

I did make something similar once. It was okay...I think it neede to be thicker.

You may want to reduce that recipe, unless you have a really, really big deep freeze. :wink:

I had it at a training this summer - it was thick and really, really good. Yellow curry is my favorite. I admit, I sort of ate around the sweet potato, it was an odd combo.

I'll have to see if I can track down my favorite version of this particular soup, but if you are feeling particularly carnivorous take a look at some feijoada recipes. It's a Brazilian stew that has about a million different varieties (every family has their own version), but it typically consists of black beans, bacon, pork, sausage, etc. It's often served with orange slices and some form of greens. My favorite recipe involved blanching collard greens and then cooking them in the reserved bacon fat from the stew. So freakin' good. If I track down the recipe, I'll post it here.
