For non-online games, my favorite time sink is Slaying the Spire. It's a pretty simple rogue-like card game, but man, it's addictive. I think I have over 300 hours in it.

Cool, I was playing ranked for a bit early on, but it just seemed tough to follow the metas. I enjoy watching on twitch though.
It can be very tough playing against deck combinations that people find online ("net decks"), as those are just set up so well. If they get the right cards, you're toast. I specifically avoid doing that, as it seems more rewarding if I build a deck by my own logic and experiences. I figure I'm doing pretty well if I can keep my wins/losses at 50/50.
I second Hearthstone. It's perfect as long as you're looking to kill ~10 mins.
I would play ranked though, just more likely you'll end up around players at your level.
I need a new game to play when I'm too lazy to think but Desert Golf has served pretty well in that role.

I don't console game as much as I used to. Favorite console time killer game of all time for me is still Capcom vs SNK 2. That game is fighting perfection.
