A Texas style kolache is basically a glorified pig in a blanket?
Haha, maybe a little bit. But it’s a sweeter brioche-style dough and a bigger variety of fillings. We had jalapeño sausage, ham and cheese, and bacon egg and cheese.

Yeah, even though they look good, it's a bit of a stretch to call those kolaches methinks. Sykora Bakery in CR makes some wonderful traditional kolaches, including some savory ones as well.

Many Czech-Americans here, rather than feeling threatened by new varieties of kolaches that may obscure the pastry’s origins, are so confident of their cultural and culinary patrimony that they embrace them. In that spirit, some church festival organizers have expanded their kolache bake-offs to include the category “other.” And old-guard purveyors like Hruska’s Store and Bakery, in business in Ellinger since 1912, now sell nontraditional cream-cheese-and-chocolate kolaches.

“Maybe the most important thing is that kolaches, in some form, continue to be made,” said Ms. Orsak, the folklorist. “And they continue to be eaten. Kolaches have long been a kind of poster child for Czech identity. Now they’re becoming a symbol for Texans. Maybe that’s not so bad.”

We went there a few weeks ago. I had the Jalapeno one, which was good. My daugher had the breakfast sausage one and the last 10% that she didn't eat was outstanding.

I was also "that guy" who said something about the Colorado game to Brent. He has really modest, called it his "one big play" and said he may just put it on constant loop on one of the TV's in the lobby. :D

Not a huge place, not really meant to eat there. But I think they have a good start and am excited to stop back in again soon

My wife had the bacon, egg, and cheese, and I had the sausage, egg, and cheese with sausage gravy. She thought hers was a little bland. Mine was excellent. Next time, I'm trying the jalapeño sausage.

I have to do some Christmas shopping Friday morning at Scheels; may have to stop here for some breakfast afterwards

Nice! Already planning on grabbing one and then heading down to 515 brewing to wash it down with a beer.

It's too bad they aren't going to give traditional kolaches a try. I understand no one can make them like my grandma use to, but I bet they would still be pretty damn good. I would love a place where I could pick up a traditional cherry kolache locally.
