We've been frying turkeys for thanksgiving for quite a few years now. Traditionally we've had a turkey frying party the Sunday before thanksgiving and make it a brunch event. Typically we fry 12-15 turkeys. Cancelled this year because we were attending the Utah game.
Anyway, we'll be frying a few on thanksgiving morning, and i was wondering if others here might have any creative injection recipes. We've used the same recipe for the last 20 years, so was thinking about maybe changing things up. I'll post our recipe below, but would love to hear if others here are doing something different.
2 Tbl Salt
2 Tbl Tony's Seasoning
2 Tbl Dry Mustard
2 Tbl Worcestershire Sauce
2 Tbl Cayenne Pepper
1 Tbl Tabasco Sauce
1 Tbl Garlic Salt
2 Tbl Onion Salt
1 Tsp Lemon Pepper
2 Cups Chicken Broth
1 Tbl Celery Salt
Mix all seasonings in a large pot and heat. Simmer about 1 hour, let cool completely. Using cheese cloth, filter liquid, saving paste to rub on the outside of turkey.
At least 48 hours before cooking, inject liquid into turkey and rub with paste. Place in plastic garbage bag and store in refrigerator or ice chest until ready to fry.
