Cooking Question: Substituting Mayonnaise for Sour Cream?

Hey, I am going to try and make a copy cat buffalo wild wings parmesan garlic wing sauce for dinner one night. A lot of recipes use mayonnaise as the base, but I am wondering if I could substitute mayonnaise for sour cream? Or would it be better to split the two?

And for those who may ask the question, I do not live close enough to a buffalo wild wings restaurant to buy a sauce. Additionally, purchasing online on Amazon, the cost is almost double what I can do at the store.

Mayo is a really good tenderizer. Depending on how you cook them, they may burn worse with the cream base as opposed to the egg base of mayo.

Sour cream and mayo are completely different. One being a fermented dairy. The other an emulsion of oil acid and egg.

I'd say if you're using a copy-cat recipe for the first time, use what it calls for to see if it works. If it does, then get a little crazy with swapping out ingredients.

That's my mentality, anyway. My wife immediately modifies several ingredients and then gets upset that it tastes nothing like what it's supposed to taste like. Go figure.

This sauce would be used to toss the wings in, so I wouldn't be marinating the wings and then cooking them.

Greek yogurt would be a decent substitute for mayo in a wing sauce recipe, if you're just going to toss the wings in the sauce.

I agree with this, I typically sub greek yogurt for sour cream and in this situation it would be a good sub for the mayo.

The greek yogurt sub for sour cream is the default at my house. Can't really tell a difference, and it works with the wife's diet. Never considered subbing greek yogurt for mayo, though. May have to try that the next time I make up some fish taco sauce.

Agree. Plain Greek yogurt is a pretty common substitute for mayo. Haven't ever substituted sour cream.

I generally don't like yogurt as well. Not sure if this would make sense, but I am not a fan of the base yogurt smell. I think I will give mayo a try and see how it goes, then next time go the plain yogurt route and see how that goes.

I've found whole milk-fat greek yogurt to be better than sour cream on every level and more diverse. I'll never go back. I don't like the low-fat stuff nearly as much unsurprisingly.

Just mix ranch with a lot of hot sauce. Then add garlic. It's not bad.

Meh, my wife buys the 0% Fage yogurt in giant tubs. For making up a sauce, it's fine. Getting the consistency and flavor right is the key, and I'm usually making a sauce that has a bit of spice to it.
