A few weeks back I noticed the AC unit is starting to go out at our house. Made a home warranty call, and since an HVAC guy said the coil had hail damage we also put in a homeowners claims. Wrangled a solid 2K all told out of our coverages to replace it.

So we had a few more HVAC companies come in for estimates. While one guy was doing estimates and getting an eye on all that needs to be done, he closed a door in the basement to where our cat boxes are. My man room/1980s NFL memorabilia mecca room got F'n cat pee'd in. CAT PEE!!!!!!!!!! Door was closed from about noon until 8AM the next morning. Found 3 areas the cats were peeing. Luckily one was on a cat bed.

Found a product at the Cleaning Mart here in Omaha called Enzyme Lift. It seems to be winning the battle on the spots. The lady suggested I get the bottle sprayer and saturate the area. That area got half a bottle just poured on it, and left for about a day before stamping on a towel to remove the excess then running a fan.

Went to Nebraska state fair for a few days and returned to find only the Enzyme lift aroma, which I don't mind. Dumped more Enzyme lift on it yesterday morning. Ran the carpet cleaner on it tonight which did dredge up some cat stink, but its tamed down now. Will repeat the process again once its dry.

If this works, i'll be really glad that I don't have to burn my house to the ground and start over. On a side note wife decided to upgrade the furnace which is probably original from when the house was built in 1989. The 2K in payouts is getting a bit diminished now, but whatever...

I was cleaning up my desktop last night & didn't know why I had my enchilada recipe on the desk. Just remembered this morning. It looks involved, but it's really not that bad. The sauce and chicken can be made in advance if you want, so that the actual Enchilada construction goes faster. :)

Sauce:

Everything needs to go in while stirring so have stuff ready to go. :)

Mix 3 T flour, 1 T chili powder, 1 t cumin, ½ t garlic powder, ¼ t oregano, pinch of salt, pinch of cinnamon in a small dish, set aside.

Have 2 T tomato paste and 2 C chicken broth also ready to add.

Warm 3 T olive oil in a medium saucepan (recommend Teflon coated) until small flick of flour sizzles in it

Make the roux by adding the dry ingredients while whisking constantly. Cook 1-2 minutes.

Still whisking, add tomato paste. STILL whisking, SLOWLY add broth. Bring mixture to a gentle simmer, let simmer for five or so minutes until it thickens (whisk it often to keep it smooth).

Remove from heat, whisk in 1 tsp cider vinegar and season to taste with black pepper (and maybe a little more salt…optional).

Enchiladas:

Boil 6 boneless chicken breast halves with one stalk celery (chopped in 1” chunks) and ¼ onion (cut as a wedge) until chicken is tender. Takes about 20 min. Remove chicken (discard celery & onion) and shred with a fork.

Put chicken, small amount of sauce, 1 “blop”sour cream & handful of shredded cheese (we like co-jack or Monterey jack) in a saucepan, stir well, and let simmer over low heat for about 5 minutes until cheese is melted.

Spray bottom of 9x13 pan w/Pam, and “paint” with a small amount of sauce.

In a small frypan, slowly melt a pat of of butter/margarine. One at a time, place a corn tortilla in the frypan for approx 10 second per side (this softens it so you can roll it easier). Remove from frypan, place on sheet of waxed paper. Note - waxed paper is just to protect your counter-top...it does NOT go in the pan with the enchiladas!. Spoon some of the chicken mixture into it, roll it up (edges should barely overlap) and place seam side down in the 9x13 pan. Repeat until all of the chicken mix is used up. Makes 10-12 depending on how full you fill them. We stuff them. J Pour remaining sauce over the top, then evenly distribute 1-2 C of shredded cheese over the top, depending on how cheesy you like them. Bake at 325 for about 10 min or until cheese is melty. Remove from oven and serve warm. We like to top them with sour cream or guacamole, sometimes a little shredded lettuce or diced tomatoes.
 
Hey today is a better day already, woke up having water. Had a broken wire that needed splicing yesterday. splicing wasn't so bad finding the problem is what took the time. .
 
Saw a guy at Hy-Vee last night with a T-shirt tied over his face like he was in a gang. He looked me dead in the eyes and then walked past me, shot his arms out like he was pretending to be an airplane, and then ran across the street.

So the zipper on my pants broke this morning and I'm trying to decide if I should wear the spare pair of pants I have in the office that don't match perfectly or go untucked all day (I do wear a tie). #pants(nottheguyknownaspants)problems
 
At the fair this weekend, I noticed a stand for an Independent candidate. Today, I discovered that, when asked a question about Syria, Gary Johnson (Reform Party) had never heard of Aleppo. These things got me thinking and I decided to look at some of the smaller party candidates that are running for president. These two things stood out to me.

In Oklahoma, Joe Exotic is on the ballot as a presidential candidate.

In New Jersey, there is a candidate from the Nutrition Party.

Is this possibly going to get moved to The Cave?
 
I like KC's use of "blop", because with a dip/spread I make, I say to use "3-4 glugs" of worsterschire sauce.

Where you at again? I'll bring you a meal. And I always bring a dessert, too.

FYI--school picture day is one of the most dreaded days of the year. Especially for a mother of 3 girls (in school--in 2 years it will be 4).
