For a sport that never stops the clock, isn’t the play always on? Like a live ball in basketball?

Same basic concept, if you’re in an illegal position at the start of the play it doesn’t count. Football is at the snap, soccer is when the ball is played in.
Think of it this way:
In football, the wr has to come back after every play and set up behind the line of scrimmage. Offside play in soccer would be like allowing the WR to be past the line of scrimmage when the ball is snapped
VAR offsides in American football would be more like saying the WR’s pinky was past the line of scrimmage when the ball was snapped, so we’re going to call back the TD after everybody’s been celebrating for a minute and the PAT team is on.

And football somehow allows KC’s LT to be 2 yards off the line of scrimmage without penalty. If you give an inch, they’d take a foot. I’d prefer to have non-subjective rules personally.

There's a red center line as well... but it stopped mattering when they eliminated the 2-line pass (one of the greatest rule changes hockey ever made).
