I'd like to do something like this out to Niagara falls. My biggest problem is it almost impossible for me to go an entire weekend without dealing with work and it pisses me off if I take a week of vacation that I have to wait till Monday and be back by Friday.This is pretty bad for a guy with a big road scooter. We had friends that did a similar loop except they came back through Chicago instead of going up through Michigan. They said the Ontario lakeshore is spectacular.I'd like to do something like this out to Niagara falls. I would kill for a free week in order to take a vacation. I haven't taken a real road trip in about 4-5 years.
As someone else said Iceland is gorgeous. I think in the last few years they have been overwhelmed by the amount of tourists.

Not sure when your time frame is or what your preferred activities are, but I did a trip a year or two ago to Arches & Canyonlands NP and it was great. You could take a week, rent a jeep and hit the 5 NPs in Utah. Some amazing scenery out there, especially if you've never been. Probably not a good idea in the summer though.
