So a group of middle school parents is going together to have lunch catered from Hickory Park for the MS staff next week. I volunteered to make desserts. What sounds good? I was originally thinking a couple of cheesecakes plus maybe cupcakes. (42 staff total) Anything else sound good? Want to do more than just bars or something easy. Throw a couple "Christmassy" desserts on there like peppermint something? They are trying to make it holiday-ish and have Christmas music playing.
EGGNOG PIE!!!!!!!!!!!!! Mostly Fast and easy :) If you do it the 'lazy' way you only need: 2Cups Eggnog 2Cups Cool Whip (Though I only did 8oz last time and it worked 1packet unflavored gelatin and 1 pie crust. Cooking: (Bake crust first) 1. Soften gelatin in 2TBspn water 2. Put pot on stove with medium heat 3. Pour in eggnog 4. Pour in gelatin and stir until dissolved. (Trick here is to get it dissolved with out warming it too much) 5. Put in frig (I did freezer for 30 min to quick set or so) When partially set add cool whip and fold in 6. Pour into baked pie crust and cover and let set overnight. :cool:

Seeing the phrase eggnog pie just made feel even more sick now.

Is it kind of the consistency of like a custard pie?
 
I found an eggnog cheesecake that I may do, plus chocolate cheesecake and white cupcakes with either peppermint and/or white chocolate. Going to make everything in cupcake size so don't have to worry about cutting.

come live with me and bake for me. The neighbors are going to have an in-ground pool and backyard skating rink. Your kids won't even notice they moved.

Sorry, can't move. I'm holding out hope that the Hoiberg twins will marry their HS sweethearts, too. And that my daughter happens to be one. There are two of them, so chances are twice as high, right?! So gotta stick around another 6 years. ;)
 
Channel flipping before the hoops game at 6:00 and find dodgeball on Fox Sports North. Not the movie, an actual dodgeball championship from Las Vegas played on some bouncing trampoline mats. Weird.

uhhhhhhhhhhh absence makes the heart grow fonder! haha. That's a pretty legit excuse though. I'll have to accept it.

we have our first playoff game tonight. Hopefully DH's energy is back up cause there is no way that I can be an adequate replacement.

The terrible urge to pee, and we're only 5 minutes into the first quarter of the girls' HS game. Uuggghhhh
