Going back to thaw/dethaw....

Kicking around the idea of doing sweet pickle relish, and looking online for recipes. One called for

4 cups cucumbers, deseeded and chopped

Who the heck says deseeded? It's seeded and chopped.
 
Bugs, does the tapioca do the thickening for you? Never thought of that one...

Yes, it's a good thickener. I use pretty much the same recipe when I'm making cherry pie with fresh cherries, maybe a slight difference in amount of sugar. I'd have to look it up, can't remember. But the key ingredient in both pies is the *almond extract*! Love that flavor!

And seriously. My parent's lot is a third of an acre, and they have a riding lawnmower. (Push mower for trimming) Ain't nobody got time to push mow a whole acre.



So here's a question...I'm pondering my first foray into baking a "traditional" pie, and I'm thinking peach is a good start. Do you buy ripe peaches? Or perhaps overripe/underripe? How do you tell if they're ripe?

BTW, HyVee has white peaches on sale, which are different than a normal peach. They are quite delicious...a bit firmer, closer to an apple consistency.

I have a very strict rule for buying fresh peaches, WHICH I LOVE! if they're ripe and not dry or pithy. If you pick it up in the store and sniff it and you can't smell the peach smell, DON'T BUY IT. They're only good if they actually have the peachy smell. Of course then the shelf life is like 3 days, so eat 'em fast!

They're only good if they actually have the peachy smell. Of course then the shelf life is like 3 days, so eat 'em fast!

Best way to get them is at fruit stands. The ones in stores have to be picked before they are ripe or they won't survive the transportation. Tree-ripened is ALWAYS better than shelf ripened. :)

Same goes for pineapples. Smell the bottom where the core is.
 
Do any of you all have a steam shower? My master batch just has a whirlpool tub, and I'm thinking about trying to put a steam shower in there this winter.
 
I've had success with ripening peaches in a paper bag for a few days. But if they are super-underripe, it seems like nothing works. Lost cause. -- They shoudl have just a little give - but not super soft. No brown/soft spots and yes (!) the peach smell is an absolute necessity.

The best peaches are at the old Slim's Market (I think it has a new name now) on Hwy 69 at Story City. I buy by the lug and freeze them.
 
Same goes for pineapples. Smell the bottom where the core is.

How I pick pineapples is to try to gently pluck the leaves out of the top- if the leaves are easy to pluck its a good one, if they are hard to pluck or don't come out at all they are not ripe.

What I have problems with is picking a good watermelon. Its usually not ripe enough. Any tricks?
