Yes a NFL head coaching job is more prestigious, however, some coaches like to control all aspects of the team. In college, you control the recruiting (AKA, Player personnel) In the NFL, the GM and the scouting department give you all the players. Coach can give input but most don't make the decisions (Other than Pete Carroll, Jon Gruden)
Nick Saban loves to control all aspects of the program and college is the only way to do that.
