Playing a guy who knowingly broke a contract and then trying to sue others for breach of contract would be the ultimate "have your cake and eat it too".
Maybe they will, maybe they won't. And a lawsuit also means that the opponent backing out has to spend resources to defend said lawsuit.
We shall see how many of these "righteous" ADs will stand firm when push comes to shove.

Schools have institutional discretion for scheduling. They don't have to schedule Tech.
They could try anti-trust or tortious which schools could countersue but both are a high legal hurdle for schools to clear.
Tech doesn't really have any legal ground to stand on. Nearly any judge not in Lubbock would throw the case out citing schools' institutional discretion for scheduling.
