When I stayed in Vegas most recently in January I stayed at Paris which as far as location goes is pretty much smack in the middle of the strip. The hotel itself is pretty standard, but you have direct inside access to the walking mall that spans quite a ways. There are a couple of good restaurants in there and it's cool going to the top of the fake Eiffel Tower as it directly overlooks the Bellagio fountains.
The nicest hotels are going to be the Aria and Bellagio but those will be pricey. I wouldn't stay at the Stratosphere or Circus Circus unless you really enjoy walking A TON or spending money on a cab or Uber anytime you want to go to the strip.
