French Dip

Beef roast, can of French onion soup, can of beef consumme and 1/2 a good beer(optional). Low for 9-12hrs depending on size. Use liquid to dip hoagie.

Easy peezy: Pork chops and your favorite BBQ sauce. Just layer them...eight hours on low.

Medium difficulty: Potato soup

1 pkg of frozen "southern-style" hash browns
3 cans of chicken broth
2 cans of cream of chicken soup
1/2 lb of bacon, cooked and broken up into bits.
4 oz of cream cheese

Mix first four ingredients together in crock pot, can be set on low for 8 hrs, or high for 4 hrs. An hour before serving, add cream cheese, and stir in until as smooth as you can. (I still have some difficulty with that...any advice?)

A bit more difficult: Cheesy chicken and rice

Appox 3 lbs of boneless chicken breasts
1 onion, chopped
Can of cream of chicken soup
Box of Zatarain yellow rice
Can of corn
1 bag of shredded cheese, your choice (We're a co-jack type couple)

Place washed chicken breasts and chopped onion into crock pot. Spoon the can of cream of chicken soup over it. Cook low for 8, high for 4. Halfway through, pull chicken out and shred, place back in crock pot. Prepare rice as shown on package. Stir rice, drained corn, and cheese into chicken mixture. Let sit for another 15 minutes. Divine.

Im pretty sure anything cooked in a slow cooker is never considered anything but easy difficulty.

4-5 lb chuck roast, 1-2 packages of pepperonis, a little bit of salt - low for 6-8 hours, shred a half hour before done - serve on hoagies with provolone

3-5 lb pork shoulder, 2 cups pineapple juice, 1 cup brown sugar, 3/4 cup soy and/or teriyaki sauce. Low for 6-8 hours, shred toward the end of cooking time, serve over rice.

BBQ pork.
1 pork shoulder (very cheap at Sams)
1 chopped onion
1 clove garlic

Fill with water and cook on low 8-10 hours. Remove pork and shred. Discard water and onions. Return pork to the crock pot (wiped out). Add favorite BBQ sauce and cook for two hours or so.

On the cream cheese question - I suggest softening/melting the cream cheese in the microwave first, stirring until smooth. You may have to microwave, stir, microwave, stir... It should incorporate into the soup easier.

Cube, season and pan sear a chuck roast, put in slow cooker on low for 8 hours.
Pour in a cup of beef broth, red wine and a bottle of extra stout guiness.
Throw in some garlic cloves, thyme and a few bay leaves.
4 hours in dump in root veggies like potato, carrots, etc. You could put them in at the start too but they get a little mushy after 8 hours.

Taste the magic.

Other than a smoker, you can't beat slow cooker ribs.
I put a shallow aluminum disposable pan upside down on the bottom of the cooker so the meat doesn't boil in juices. Then pour a little water on the bottom so the fat doesn't burn.
Cook for about 8 hours till the bones start to fall out.
Then Broil them for a few minutes, baste with bbq sauce and broil a few more minutes to carmelize the sauce.
