Went to Solon to eat a late breakfast with my best friend and his fiancée. The food was great and I got a free slice of strawberry cheesecake. It was the best cheesecake I've ever eaten.
 
Came home early. Raining. Bored. Maybe I'll harvest some rhubarb and make some crisp.

Note to the rest of you, only I can eat massive quantities of crisp w/o getting fat. It's one of my superpowers.

Not for RTT we pretty much use common sense and police ourselves.

DH will never let me hear the end of this. This cheesecake is so overfull. IDK why I thought it wouldn't rise and decided I'd take the chance filling to within millimeters of the top. I did grab a measuring cup and take 3/4 cup out.

Hazards of combining recipes to get what I want. Also having to watch closely to figure out when it's done.
 
welp, hope I didn't ruin it. Gotta shut it off now, top is getting too brown even after turning down the temp. Still pretty jiggly and it's supposed to be just the middle.
 
so I snuck a bite out of the side and it kinda tastes like eggs. IDK on this. I'll be so sad about this. There's a half ton of cream cheese in it, why it no taste like cream cheese???
 
does cheesecake get denser after cooling? Right now it's like, some kinda egg souffle or something.

Think I'm off to the store to get more cream cheese, graham crackers, and cool whip. Cheat and do a no bake one.
