In grade school/high school for me, spring break was always oriented around Easter. Good Friday off (maybe half a day), then the week after Easter off. (And from what I understand, it's still the same way)

Back in my day...
We started school around the last Monday in August, and we'd finish up between June 5th - 10th. We had a nice number of days off...standard federal holidays that most companies have off, plus Columbus Day, Veteran's Day, MLK Jr Day, President's Day. We'd have a week off at Christmas and a week off at Easter, and then throw in a teacher's in-service day once a quarter, we were fine. (Oh, and in Illinois, we got Casimir Pulaski Day off in early March, too)
I have a friend in New York state where they had a week off in February (why?!) and now are in spring break. Their school district doesn't get out until the end of June.
