This is encouraging. I am willing to change up offered food a bit, but at the same time I don't want to start fixing her a separate meal every time option.

Yea, I would never start the separate meal option unless it is an easy to fix staple you have around. With my mom, if you didn't like dinner, you made yourself a peanut butter sandwich. With my mother-in-law, it was cereal. Of course, they also had lots of kids but still you want your kids to be flexible and not catered to. Maybe yogurt can be your fallback if she doesn't like what else is offered.

Moar food and drink talk! Less poopy talk!

I have two jars of spaghetti sauce. I am trying to decide if pizza boats would be good next week or if I should go the noodle route. I also thought of just dumping the sauce on the meat in the crockpot and add cheese.
 
If you are going to make them continue to try things they don't like it is important to practice what you preach, however. While I have taught myself to like most foods, I am not a fan of cooked (ruined!) broccoli. I hated it as a child and tolerate it as an adult. But when we are having it I make sure I eat some because we try everything. It is a mite easier to make the picky kid try their dislikes if they see that the adults have to do the same. I don't think your little one is old enough to apply this logic, but it won't be long and she will be.

Also feel the need for walking tacos.

I eat pinto beans and some kidney beans now... They're not bad, but still not my favorite. Definitely good to remember. Somewhere I also saw an idea of giving them a smaller portion (older kids) and they had to at least have a bite or eat all the small amount of veggies. Instead of giving them a full portion.

Walking tacos - Fritos or Doritos?

I first had them with Doritos and generally do, but I think I am in the minority being okay with either Fritos or Doritos.

This disagreement could get ugly.

I could see it being good. I used to love Fritos, but now they are almost too salty for me.

Yes! Our daughter would say she only likes green beans for vegetables. We always make her try a small portion of other veggies but Mrs. Velo will make beans a lot or have fresh ones on hand so she can have them. That being said she tried asparagus and much to our surprise loved it. It is now on her like list.

Some people will say that Fritos are the only way to make a true walking taco and get downright nasty about it. I never thought about Fritos until meeting one of those people. I guess having Hilton walking tacos, most Cyclones are used to a Dorito bag taco.

Maybe it's an Iowa thing? I've had a Dorito walking taco well before ever going to Hilton.

I don't think I had ever heard of a walking taco until probably 12 years ago. I don't know why I hadn't, just never exposed to it...although I have a very, very young memory of seeing/having/hearing about a bag of fritos with stuff on it at a rodeo we went to, but I can't say where or when this would have been, but I seem to remember being amazed by that concept...albeit, I think it would have been called a Frito Pie in that instance.
 
I have never had a walking taco with Fritos but would be willing to give them a go. Been eating the Nacho Cheese Dorito version since the oldest started t-ball probably about 20 years ago. They are a Little League survival staple in Iowa. Also awesome at grad parties. Never had one in Hilton, I'm not a Rockefeller.
 
I really need to remove the tv from my bedroom. My willpower to turn off movies like Bull Durham at 1230 AM is pretty much non-existent.
