What does Costco have? That’s the only decent place to get beef in Ohio.

You need grain to feed the masses though. At least for now. Unless you want mass starvation. Will that change? Hopefully.

This is the kicker with many things. Another example is hog production. There are places that specialize in the feed lot style pigs. People think it is the feed lot that makes their hams and meat more flavorful, when in fact it is that they nearly always have berkshires for their breed. They have a higher pH making them saltier flavored and gives the meat a more pleasing taste. Problem is that we would cut our meat production in nearly half if we went to full berkshire hogs throughout.

The alternative is that the processors have realized that the pH in meat drops during its hanging time until it gets to chilled temperatures. So now the new facility have blast freezers to drop the hanging temps extremely fast and keep a higher pH to the meat. What has made the meat more flavorful in the general meat case. Many things are done now simply due to need for production and cost.
