Jimmy went off script. Kim's plan was for him to read the letter, but he aborted and took it his own route which fooled everyone even Kim. Jimmy had even her believing he was sincere so when he reveled it was an act she is shocked.

She cares for Jimmy, that is obvious. She likes Jimmy because she thinks he cares about people. When you fully look at it, Jimmy only cares for Jimmy. She realized that Jimmy is fully out for himself and is a cold and relatively heartless person when it comes to others. It almost appears that at the end, people will end up disliking Jimmy when BCS is all over. They are trending that direction. The disdain that you feel for others, actually is a cause of Jimmy. They have made Jimmy be this likable f' up.
When he reads the letter, she believes that Jimmy has this caring, loving heart. He kinda rips her heart out when he laughs in her face and basically insults her when he laughs at those who were about crying.
I think she expects Jimmy to be someone he's not. Jimmy cares about some people - most notably, the underdog, the disadvantaged. That's why he started working for the elderly - yes, he took their money, but he also genuinely cared about them. She doesn't see that he has contempt for the "haves" of the world, and she expects him to be in touch with his feelings in a way that he's just not. I think Jimmy truly grieves Chuck, but isn't going to let even himself acknowledge it. You can tell the way he's acting out that something is up with him.
I think Kim kept hoping that Jimmy was good through and through, and use his skills for everyone... but she doesn't see that a lot of it is driven by his contempt and desire to trick the elite.
I think this is very accurate. Saul is hilarious in BB, but he's not a good guy. You love his personality, but he is all about his own survival, with a small seam of good. That's more and more who Jimmy is becoming - it's lovable when he's a bit character, but you hope for more from a main character. It's why Walt is sort of an antihero in BB, he's not really a good guy at the end (even though he redeems himself some in the last episode).

While yes Jimmy cares mainly about himself he has a soft spot for people being blackballed like the girl trying to get the scholarship. She like Jimmy made a mistake and is being defined by it (proven by how the one lady described her) and he hates to see her treated that way by people who think they are better than her (pretty much how Jimmy has been treated his entire career by Chuck).
The whole scholarship seen took me back to career fairs at ISU and how I was treated by large accounting firms, so I get how Jimmy feels.
