You are correct. Note that even Birdy, who is darn near a professional baker, stores her stuff in the cabinet/cupboard. Sure, the fancy ones look nice on the counter, but when you're constantly cleaning around a canister that you use once a week-ish, it gets annoying.

Since we got a bread machine, we use our flour once a week, if not more. I bought a 50# bag of flour right after the new year and we're about thru it. The bag is in the basement, and I have a plastic container that holds probably 7# that is in our kitchen cabinet.

Unrelated topic:

Birdy (or other baking peoples), do you use cannisters to store stuff like flour, sugar? Any recommendations? I always thought they were mostly for show but now dealing with holey, messy bags, DH and I are like we need these. I gave myself a paper cut on the flour bag one time. Not ok.

I use something similar to the "lockits" on this page. They seal very tightly, and stack well in my cupboards (I'm not one for fancy canister sets & cookie jars cluttering up my countertops).
