Just remembered I need to go into the office tomorrow morning so I guess that butt is going to brine a bit longer. I know a guy that brines his pork butt for 3 days before he smokes it.Put a pork butt in a brine this morning and will let that sit in the fridge all day. Tomorrow morning I'll set up the Weber for a long cook and get it going.
Most of it I'll vacuum seal and freeze for pulled pork sandwiches over the winter time.
