These shoots are the early grassy stage of the flowers above. The blades die off, and the then a couple of weeks later the flower stems shoot up.Tennis?

Are they disk shaped?Evidently carrots were really cheap the last time the stir fry company froze up a batch it was at least 80% carrots, a few chunks of broccoli, a few pea pods, no mushrooms or the crunchy tan plant whatever that is. Oh well by the time I sauteed the shrimps in some garlic butter it was ok.
Then they're sliced water chestnuts. They're more for texture than for added flavor.
