There is a trick in getting the logo to show up really well on dark meat. If you flip it more than once the logo won't line up the second time.
On pork it really looks sweet. You have to get that logo side cooked all the way. So you don't have to flip it twice.
I have found that using Pam on the surface of the grilltopper works great or even Olive Oil brushed on the raised pattern.
