To be fair, when you smoke a turkey, it still gets cooked...I’m thinking I misinterpreted the title of this thread. I thought this was a discussion on how to cook a Thanksgiving turkey, but most of this information belongs in the smoking meat thread.
Nah you can wet brine that long with a turkey that big.Purchased a 25 pound turkey yesterday at the North Walmart in Ames. Planning on spatchcocking, then wet brining for 36 hours. Never smoked a turkey this large before, will that be too long in the brine?
