Chili Recipe

I do this:
1 lb ground beef
1/2 lb Grazianos
1/2 lb Ground Turkey
Can of kidney beans
Can of chili beans, Mrs. Grimes
Can of diced tomatoes
Can of tomato sauce
Package of chili seasoning, Lawrys usually
1 bell pepper, green, yellow, or red, sometimes all
1/2 can of beer
1 clove of garlic
1/2 yellow onion
chili powder to taste

I take a masher and smash all the meats together while they cook. Then I drain and add the seasoning. Then add all of the other stuff.

This has won me a couple office cook-offs. My son and I like chili with a little sweet, but my wife doesn't. So we sweeten it with a little ketchup. I know, it sounds bad, but it really sweetens it up. Also one of my favorite things to spice it up lately is Sriracha sauce.
 
I'm told this is award winning...even so, I'd probably customize it a bit.


· Chuck Roast - ~2 lbs pre rubbed in the sweet mesquite rub from Costco


· Spicy Italian Sausage - 1 lb divided into small pieces


· Bacon - I used about 10 slices of thick cut peppercorn bacon chopped up


· Salt


· 1 large yellow onion, chopped


· Garlic powder - a dash


· Chili Powder - about 1/4 c


· Dried Oregano - 1 T


· Ground Cumin - 1.5 t


· Cayenne pepper - a dash


· 2 (28oz) cans of whole tomatoes with all of their juices chopped up into bit sized pieces


· Fresh Cilantro - 1/3 c chopped


· Beer - I used 1 can of Coors Light because that's what we happened to have


· 1 (15 oz) can of red kidney beans


· flour


Brown the sausage and bacon in a pan, and then cook the onion in the grease that was left over along with a dash of garlic. Then just combine everything but the beans and flour in the crock pot, mix it up, and cook it on low overnight. About an hour before serving add the beans and a little bit of flour to thicken it up.
